This extraordinary concept celebrates the art of Japanese whisky, elevated dining, and the harmony of craftsmanship. Rooted in the heritage and precision of Hibiki, our restaurant offers an immersive experience in whisky culture paired with exceptional cuisine.

We are seeking a visionary Beverage Director to lead our beverage program and help define this globally significant concept. This is a unique opportunity to shape the direction of an iconic venue that brings together Japanese excellence in food, whisky, and hospitality.

Position Overview:

As Beverage Director, you will lead the strategy, creation, and execution of a world-class beverage program that reflects the legacy of Suntory and the artistry of Hibiki. From developing a globally curated whisky list to orchestrating innovative cocktail experiences and service rituals, you will be responsible for curating unforgettable guest experiences while ensuring operational and financial excellence.

Key Responsibilities:
Program Development & Curation
  • Develop an award-caliber beverage program with a core focus on Hibiki and the broader Suntory whisky portfolio, complemented by premium global selections.
  • Curate seasonal cocktail menus that reflect Japanese aesthetics, balance, and precision.
  • Partner with culinary leadership to design thoughtful food and whisky pairings.
Education & Service Excellence
  • Lead intensive training programs for staff on Japanese whisky, cocktail artistry, spirits, and beverage service philosophy.
  • Serve as the in-house expert and ambassador of Hibiki and Suntory brands.
  • Create service rituals that enhance the storytelling behind every pour.
Operational & Financial Management
  • Oversee inventory, procurement, and supplier relationships with a focus on rare, limited, and exclusive expressions.
  • Maintain beverage cost controls and hit targeted profitability metrics.
  • Ensure all local, state, and federal alcohol compliance standards are met.
Guest Experience & Brand Representation
  • Be a visible presence during service, engaging guests with knowledge and hospitality.
  • Host tasting events, whisky dinners, and VIP experiences.
  • Represent the brand in media, partnerships, and industry events as needed.
Qualifications:
  • Minimum 5 years of experience in a senior beverage leadership role in a fine dining, luxury hospitality, or high-end bar/lounge environment.
  • Deep knowledge and passion for Japanese whisky, global spirits, and beverage innovation.
  • Strong leadership and training skills with a commitment to hospitality excellence.
