Position Statement

The Assistant Outlet Manager at Osteria Mozza leads operations and enhances guest experiences, with expertise in wine at our celebrity chef restaurant. Working closely with the Outlet General Manager/Assistant General Manager, you will lead the team, drive revenue, uphold service standards, and promote our wine program.

What will I be doing?

As the Assistant Outlet Manager, you will:

  • Assist in the strategic management of the restaurant alongside the Outlet General Manager and Assistant General Manager.
  • Identify and maximize revenue opportunities through upselling and suggestive selling.
  • Manage operational resources for efficiency and cost-effectiveness.
  • Coordinate with Engineering and Housekeeping to maintain cleanliness and functionality.
  • Contribute to marketing initiatives to promote the restaurant.
  • Oversee stock levels, ordering supplies and equipment.
  • Align departmental objectives with the hotel's overall goals.
  • Maintain a guest-centric environment and lead by example.
  • Train staff on service standards, wine knowledge, and upselling techniques.
  • Prepare staff rosters, manage leave plans, and delegate duties to ensure proper staffing.
  • Address guest and staff feedback, implementing improvements.
  • Recommend wines to guests to enhance their dining experience.
  • Develop wine pairing suggestions, considering budgets and costs.
  • Manage the wine cellar, ensuring proper storage and inventory control.
  • Work with cost control to manage wine pricing, stock takes, and POS setup.
  • Stay updated on wine trends and market developments to keep the wine list current.

What are we looking for?

Ideal candidates should have:

  • 2 to 4 years of managerial experience in a celebrity chef or Michelin-starred restaurant within a 5-star setting or equivalent.
  • Familiarity with reservation systems such as SevenRooms.
  • A valid food hygiene certificate.
  • Knowledge of current F&B trends.
  • Flexibility and adaptability to changing requirements.
  • Strong teamwork, leadership, and training skills.
  • Guest-oriented approach with high service standards.
  • Ability to work under pressure during busy periods.
  • Outgoing personality and willingness to work long hours.
  • Extensive knowledge of Italian wines and a broad understanding of international wines.
