Job Description & Requirements
Key Expectations:
- Ensure that all central kitchens and food catering operations deliver an excellent and safe experience.
- Ensure all kitchen KPIs are met via collaboration with the Executive Chef.
- Maintain high standards of food safety and hygiene.
- Highlight, investigate, and report any food incidents to the Executive Chef promptly.
- Perform ad-hoc duties as assigned.
Kitchen Operations
- Provide leadership to the entire kitchen team.
- Ensure smooth operation of all central kitchens.
- Maintain high standards of hygiene in food preparation.
- Oversee work performance, scheduling, and training of the kitchen team.
- Assist with operational logistics, including catering, transportation, and staff scheduling.
- Procure kitchen resources, including equipment and smallware inventory.
Catering Operations
- Ensure the operational success of catering services.
- Adhere to the budget set by the Executive Chef and report deviations promptly.
- Meet catering goals and address shortfalls.
- Maintain high standards of food quality and hygiene.
- Respond quickly to schools and resolve catering issues promptly.
Culinary Operational Efficiency
- Manage and improve culinary efficiency.
- Create seasonal, on-trend, and sustainable menus.
- Regularly review menus based on stakeholder feedback.
- Respond to special requests from schools.
- Write, scale, and adjust recipes to meet food and labor cost targets.
- Conduct regular food tastings across kitchens.
- Ensure safe management of food allergies.
Food Safety
- Maintain high hygiene standards in food preparation.
- Report and investigate food incidents promptly.
- Ensure kitchen teams are trained in food safety and hygiene.
Qualifications
- Passion and pride in leading kitchen operations.
- Minimum 5 years of experience as Head Chef or similar leadership role.
- Strong interpersonal and communication skills with stakeholders, including school principals.
- Proficiency in recipe creation and scaling.
- IT-savvy with familiarity in software and hardware.
- Open-minded and receptive to feedback.
- Strong leadership skills to motivate and improve team standards.
- Ability to train staff effectively.
- Competency in cooking and plating techniques.
- Proven culinary skills with at least 5 years of professional experience.
- Integrity in managing budgets.
- Knowledge of basic food hygiene and workplace safety.
- Possess Food Safety Certificate Level 3.
- Knowledge of Healthy Meals in Pre-Schools Programme (HMPP).
