Mandarin Oriental, Singapore is looking for an Assistant Chief Steward to join our F&B team.

As Assistant Chief Steward, you will be responsible for the following duties:

1. Manage all aspects of hygiene and cleanliness of all kitchens and stewarding areas.
2. Maintain the operating equipment of the hotel in compliance with FLHSS&E standards.
3. Attend regularly scheduled outlet walk-throughs and manage follow-ups.
4. Conduct daily inspections of all kitchens and stewarding areas.
5. Coordinate ice machine cleaning standards with engineering.
6. Support the Stewarding Manager with labour and chemical costs of the department.
7. Assist in monitoring and managing breakages and losses of the hotel’s operating equipment.
8. Ensure all functions and events are fully prepared according to the Banquet Event Order requirements.
9. Manage manpower allocation for stewarding staff across various outlets, in collaboration with the outsourced company.
10. Conduct training for MOSIN and contracted colleagues.
11. Oversee special projects as assigned by the Stewarding Manager.

As Assistant Chief Steward, we expect from you:
