Accounts Assistant, Cost Control (6 Month Contract)
Summary of Responsibilities:
The main responsibilities and tasks of this position are as listed below, but not limited to these:
Calculate recipe costs based on inputs provided by Chefs and Bartenders.
Verify recipe details including quantity, item codes, cost prices, and loss factors.
Calculate and analyze the potential beverage cost for each bar/outlet and compare it with actual beverage costs.
Determine potential costs for beverage items in outlets, based either on recipe costing or item prices.
Calculate and analyze the cost of events based on Beverage Control Forms submitted by Banquet and Outlet teams, including free-flow consumption packages and other related components.
In the absence of a POS system, ensure compensating controls such as a chit system are implemented for all food and beverage orders sent to the kitchen or bar.
Ensure that any creation or change of discount keys is approved by the Director of Food & Beverage, Director of Finance, and Hotel Manager prior to implementation. Outlet Managers must submit a printed test check after the key is created. (As operationally required.)
Reconcile consumption and sales; investigate and justify any discrepancies. Regular control checks to be performed on at least 5 food items and 15 beverage items.
Conduct menu engineering audits for all F&B outlets, including:
Revenue as per Sales Report from Point Of Sales System
Cost as per on the Recipes provided by Chefs
Conduct stock take in the kitchens, bars, restaurants, Food Store, Beverage Store, and Wine Cellar.
Participate in monthly stocktaking of all outlets and stores; perform inventory reconciliation to ensure zero variance at day-end.
Compile a complete hotel inventory summary to support month-end closing. Follow up with the Directors of F&B, SPA, and Finance for necessary approvals, ensuring full compliance with ACCOR standards.
Assist the Cost Controller in preparing the F&B Flash Cost Report twice weekly, including:
Compilation of purchases and store requisitions
Inter-kitchen and inter-bar transfers
Accruals and food credit handling (ALD & AccurPlus Discounts and Staff & Promo consumption)
Support F&B cost analysis during month-end closing processes.
Qualifications:
Degree in Accountancy or equivalent
At least 3-5 years post qualification in a hotel
Accuracy, thoroughness, neatness, attentive to details
Work with minimal supervision and coaching, independent and willing to learn, has good initiative in a dynamic work environment
Ensure the job is done on time, especially during month end (eg. on the cutoff period of the month, need to stay late to conduct & to reconcile outlets stock take result).
Good interpersonal skills with ability to communicate with all levels of employees
Computer-literate, strong in excel, comfortable with large volumes of data and formulas
Flexible and able to embrace and respond to change effectively
Presentable, well groomed, team player
