Job Description

Purpose of Duty:

Responsibility and ability to run all sections in a sushi bar, under the guidance of the Sous Chef.

Job Duties and Responsibilities:

  1. Operation:
  2. Assist in preparing the daily mise en place in designated section.
  3. Ensure adequacy of supplies at the cooking station.
  4. Prepare ingredients that should be frequently available (vegetables, spices, etc.).
  5. Follow the guidance of Sushi Sous Chef.
  6. Optimize the Sushi preparation process with attention to speed and quality.
  7. Enforce strict health and hygiene standards at all times.
  8. Assist with the management of health and safety and food hygiene practices.
  9. Manage and train Sushi Demi-Chef de Partie and Commis Chef.
  10. Oversee the maintenance of Sushi bar and food safety standards.
  11. Maintain good oral communication and observe company rules and procedures.
  12. Adhere to Brand guidelines and demonstrate them in daily operations.
  13. Be aware of responsibilities regarding Health and Safety at Work, reporting hazards or accidents.
  14. Attend training sessions and team meetings, contributing actively.
  15. Maintain quality levels of products in the designated area.
Administration:
  1. Follow SOPs, manuals, and recipes consistently.
  2. Ensure compliance with food handling and sanitation standards.
  3. Properly handle and maintain all kitchen equipment.
  4. Ensure proper grooming and hygiene standards for all Sushi bar staff.
  5. Maintain required food handling and sanitation certifications.
  6. Follow health and safety procedures, reporting hazards or accidents.
  7. Participate in training sessions and team meetings.
Communication:
  1. Ensure efficient communication within the Sushi bar and kitchen.
  2. Attend daily team briefings.
  3. Communicate transparently and proactively using communication tools.
  4. Display professional behavior to foster a positive work environment.
  5. Assist individuals in understanding needs, providing guidance, feedback, and coaching.
Finance:
  1. Ensure adherence to operational standard recipe cards.
HR & Training:
  1. Train auxiliary Sushi bar staff for optimal results using available resources.
  2. Manage and train Sushi Demi-Chef de Partie and Commis Chef.
  3. Communicate sensitive or serious issues appropriately.
Job Role Specifications:

Applicants should have more than 5 years of experience in high-end Sushi or Japanese restaurants, with over 3 years as a Sushi Chef. Proficiency in English and advanced sushi preparation skills are required. Ability to manage a designated section and junior staff, remain calm under pressure, and possess excellent communication skills are essential.
