Job description

Steward is responsible for ensuring the cleanliness and sanitation of kitchen and service equipment, surfaces, serving ware, and dishware, as well as waste disposal as needed.

JOB DUTIES AND RESPONSIBILITIES:

OPERATION:

  • Maintain a clean kitchen by properly washing, sorting soiled dishes, and prepping foods as needed. Keep the dish area organized and free of clutter.
  • Set up dish stations, including dish machines and sinks.
  • Keep floors clean and dry throughout the shift.
  • Wash, stack, and store china, glassware, silverware, cookware, and storage containers properly.
  • Change water in machines and sinks every two hours or more frequently as required, and use chemical dilutions set by the third-party vendor correctly.
  • Monitor waste levels and remove full trashcans and boxes at the end of each shift.
  • Follow the posted daily dish cleaning duties.
  • Assist with other duties as requested by the chef.
  • Ensure all dishware is clean and sanitized.
  • Hand wash items carefully and operate washing equipment safely to thoroughly clean service ware, cookware, and utensils, including polishing stainless steel, glass, and silverware.
  • Maintain kitchen safety by promptly clearing spills and keeping all equipment, oven vents, floors, walls, and surfaces clean.
  • Empty, wash, and return trash bins.
  • Keep the wash area organized.
  • Assist with deep cleaning projects as needed.
  • Manage waste receptacles throughout the building.
  • Follow company rules and procedures, and carry out reasonable requests from management.
  • Be aware of health and safety responsibilities, follow procedures, and report hazards or accidents.
  • Attend training sessions and team meetings, contributing actively.

ADMINISTRATION:

  • Follow all hygiene and safety regulations.

COMMUNICATION:

  • Report any missing or malfunctioning assets in the department.

FINANCE:

  • Organize storage for breakage and damaged items.

GUEST RELATION:

  • Ensure cleanliness of guest supplies.

HR & TRAINING:

  • Communicate sensitive issues appropriately.
  • Mentor new joiners.
  • Attend internal and external training and product demonstrations.

JOB ROLE SPECIFICATIONS:
