Job Description

General Responsibilities

  • Ensures cleanliness of all washing up and cleaning machinery and that equipment is in proper working order. Reports faults to his supervisor.
  • Learns fire and safety precautions, especially those concerning machinery and equipment used in the dishwashing and kitchen areas. Learns how to operate kitchen firefighting equipment.
  • Uses cleaning materials and chemicals properly and economically.
  • Maintains high standards of cleanliness and hygiene through efficient work practices.
  • Attends training sessions and departmental meetings as assigned.
  • Performs any other appropriate tasks assigned by superiors.

Dishwashing Duties

  • Cleans, washes, and dries all items processed through the dishwashing area using provided machinery, equipment, and products.
  • Returns cleaned items to their respective areas.
  • Handles all items, machinery, and equipment properly.

Cleaning Kitchen Fixtures and Equipment

  • Cleans the kitchen, including floors and halls, as directed.
  • Cleans refrigerators, cupboards, hot plates, and other fixtures as directed.
  • Cleans stoves, Bain Marie, storage racks, and other equipment after each service.

Refuse Disposal

  • Sorts refuse into appropriate bins.
  • Takes refuse bins to the refuse area for disposal or collection.
  • Cleans refuse bins in the refuse area before returning them to the kitchen.
  • Checks refuse for equipment thrown by mistake.
  • Loads garbage trucks with refuse if requested.
  • Cleans the refuse area as per the established schedule.

Desired Skills & Expertise

  • At least 2+ years of experience as a kitchen stewarding is essential.
  • Vigilant and aware of individual responsibilities related to HACCP.
  • Good knowledge and understanding of kitchen operations.
  • Friendly, polite, and courteous demeanor.
  • Strong organizational skills.
  • Excellent customer service and teamwork skills.
