Job Description
- Implement the PPM Program and schedule for all kitchen and laundry equipment in the hotel.
- Follow up on local authority requirements for maintenance plans of kitchen equipment.
- Maintain records and coordinate with the hygiene manager to ensure compliance with HACCP standards.
- Attend to repairs and maintenance of laundry and kitchen equipment, both electric and gas-powered.
- Operate, repair, and maintain all cold rooms, fridge units, ice machines, and other refrigeration systems.
- Operate, repair, and maintain all ovens, dishwashers, stoves, and other electric and gas kitchen equipment.
- Assist with the installation of new or additional kitchen equipment, providing technical expertise.
- Conduct routine inspections of kitchen and bar areas, logging observations.
- Perform daily log readings of cold rooms and refrigerated equipment to ensure proper operation.
- Carry out repairs as per manufacturer’s recommendations.
- Complete assigned checklists, inspections, testing, and log readings.
- Check and replace fused lights in the kitchen.
- Check and replace water filters for coffee machines, combi ovens, ice machines, and other water systems.
- Perform general and emergency repairs and maintenance on all kitchen equipment.
- Ensure fire safety and engineering features operate efficiently.
- Maintain proper records of all plant and equipment.
- Review daily log books, follow up on unresolved items from previous shifts related to kitchen equipment, systems, and units.
- Complete daily tasks and assignments promptly and to the standards set by the Engineering Department.
- Ensure maintenance requests are addressed within acceptable timeframes.
- Supervise kitchen equipment contractors, ensuring standards are met.
- Assist other engineering staff as needed.
- Maintain tools and equipment in good condition.
- Keep an adequate stock of spare parts and materials.
- Operate all plant equipment safely, ensuring the safety of guests and staff at all times.
Desired Skills & Expertise
- Minimum 5 years of experience as a Kitchen Technician in a 4 or 5-star hotel.
- Knowledge of repair and maintenance of hot and cold kitchen equipment, including chillers, freezers, dishwashers, glass washers, gas cooking equipment, and ovens.
- Familiarity with various brands of kitchen equipment.
- Ability to perform ARC and gas welding.
- Knowledge of HACCP standards.
