Essential Duties and Responsibilities – (Key Activities of the role)
- Implementation of FSMS and familiarity with local Food Hygiene and FSMS guidelines.
- Maintains records of Food Safety and Hygiene forms, checks, and audits.
- Conducts hygiene audits of all kitchen associates and provides feedback.
- Performs regular spot checks on food items for temperature abuse.
- Inspects food holding and transport equipment.
- Checks that all food items for storage are covered, dated, and labeled.
- Ensures proper food rotation following FIFO principles.
- Conducts daily kitchen inspections on personal, environmental, and food hygiene conditions, providing corrective action plans and maintaining records.
- Checks daily cleaning status in kitchens with respective managers and stewards.
- Ensures refrigerator and freezer temperatures meet standards.
- Coordinates microbial food tests with kitchens and laboratories for new products, suppliers, or suspected foodborne illnesses.
- Conducts vendor inspections with Purchasing and Executive Chef.
- Coordinates with Pest Control and HK for pest issues, reviewing pest control performance.
- Maintains and improves hygiene standards and documentation.
- Works with the Training Manager to conduct Food Handlers Training sessions and regularly reviews food safety standards with all food handlers.
2. REQUIRED QUALIFICATIONS
- Proven ability to interact effectively with customers, employees, and third parties, reflecting positively on the hotel, brand, and company.
- Alcohol awareness certification and/or food service permit or valid health/food handler card as mandated by local authorities.
- Problem-solving, reasoning, motivating, organizational, and training skills.
- Strong writing skills.
- Leadership abilities.
Qualifications –
- Bachelor’s degree in Microbiology or an equivalent qualification.
Experience –
- At least 4 years of related experience, including supervisory roles, or an equivalent combination of education and experience.
