Job description

We are seeking a highly skilled and motivated Executive Chef with large key luxury international hotel brand experience within Middle Eastern & European markets.

Responsibilities

  • Oversee the day-to-day operations of the kitchen, including food preparation, cooking, and presentation, ensuring quality and consistency in all dishes served.
  • Develop and update departmental SOP Manual, detailing standards of performance, policies and procedures and service standards pertinent to the efficient operation of the kitchen in accordance to Hotel's policies, standards and municipality requirements.
  • Excellent knowledge of handling large banquet facilities & ODC operations with a luxury restaurant background.
  • Ensure compliance with food safety standards and regulations, implementing proper hygiene practices, sanitation procedures, and HACCP principles to prevent foodborne illnesses and maintain cleanliness in the kitchen.
  • Manage food inventory levels, monitor stock rotation, and control food costs by minimizing waste, optimizing portion sizes, and implementing effective inventory control systems.
  • Works with the senior culinary team and is responsible for the team developing new menus and product development supported by detailed analysis and accurate costing.
  • Supervise the senior culinary team by providing guidance, training, and motivation to maintain high levels of productivity, morale, and high-quality products while maintaining acceptable costs.
  • Ensure that all departmental reports, schedules, standard recipes, menus, food presentation photographs and correspondences are completed in an accurate and timely manner.
  • Interact with management of other departments within areas of responsibility to foster and maintain effective working relations with them.
  • Identify market needs and trends in terms of food menus for both hotel guests and the local market.

Qualifications

  • 10+ years of international experience in five-star hotels and restaurants.
  • Strong leadership and team management skills.
  • Proven problem-solving and project management abilities.
  • Highly detail-oriented with a creative and positive mindset.
  • Advanced proficiency in Microsoft Office programs.
  • Ability to drive and implement innovative solutions.
  • Excellent communication and interpersonal skills.
