The Stewarding Supervisor oversees the cleanliness and organization of the kitchen and food service areas of the property. He assists the Chief Steward in managing the stewarding team, ensuring all cleaning, sanitation, and waste management standards are upheld. Responsibilities include supervising dishwashing operations, maintaining inventory of cleaning supplies, coordinating with kitchen and banquet teams, and ensuring compliance with health and safety regulations. The role requires leadership, attention to detail, and the ability to work in a fast-paced environment.
Key Responsibilities :
Strategic & Stewarding Leadership
- Support the culinary and F&B department in creating and executing setups that reflect the restaurant’s concept, considering sustainability commitments.
- Ensure high standards of organization across all kitchen and F&B sections.
- Assist in leading daily stewarding operations and supervise stewarding staff.
People Management
- Train, schedule, coach, and mentor stewarding personnel.
- Understand the job descriptions and responsibilities of all stewarding staff in the hotel.
- Attend training and development programs as required, to improve performance and promote team development.
- Provide ongoing coaching and conduct performance evaluations.
- Evaluate subordinate performance objectively and conduct periodic appraisals.
- Foster a positive, respectful, and high-performance work culture.
Operations
- Supervise and coordinate all activities of the stewarding team, including cleaning of kitchen equipment, utensils, and areas.
- Ensure all sanitation standards and hygiene protocols are maintained in all kitchens and back-of-house areas.
- Manage inventory of cleaning supplies, chemicals, and kitchen equipment.
- Oversee the proper use and maintenance of dishwashing machines and other cleaning equipment.
- Schedule stewarding staff and allocate duties effectively to meet operational demands.
- Train and motivate the stewarding team to ensure productivity and high service standards.
- Coordinate with the Executive Chef and F&B team to support kitchen and event operations.
- Manage waste disposal and recycling in compliance with local regulations.
- Conduct regular inspections of kitchen and storage areas.
Compliance & Safety
- Enforce strict adherence to food safety, hygiene, and sanitation standards.
- Implement and monitor HACCP and safety procedures.
- Maintain compliance with local health regulations and food handling policies.
- Conduct regular kitchen and front-of-house inspections and ensure readiness for health inspections.
- Work closely with the Chief Steward, kitchen, and front-of-house management to ensure cohesive service and guest satisfaction.
- Maintain a strong presence during service and interact with guests when appropriate.
Qualifications
- Proven experience in a similar supervisory role in stewarding, preferably in a 5-star hotel or resort.
- In-depth knowledge of sanitation and hygiene practices.
- Ability to manage schedules, inventory, and cleaning protocols efficiently.
- Familiarity with kitchen equipment and dishwashing machinery.
- Good communication skills and basic computer literacy.
- In-depth knowledge of food safety regulations.
- Strong organizational and time-management skills.
- Physically able to stand for extended periods and lift up to 20kg.
