Responsibility and ability to assist all different types of sections in a kitchen, under the guidance of the Chef de Partie.

JOB DUTIES AND RESPONSIBILITIES:
OPERATION:
  • Assisting Chef de Partie in preparing the daily mise en place in the designated section.
  • Ensuring adequacy of supplies at the cooking station.
  • Preparing ingredients that should be frequently available (vegetables, spices, etc.).
  • Following the guidance of Chef de Partie.
  • Optimizing the cooking process with attention to speed and quality.
  • Enforcing strict health and hygiene standards.
  • Assisting with the management of health and safety and food hygiene practices.
  • Managing and training Commis Chef de Partie and Commis Chef.
  • Contributing to maintaining kitchen and food safety standards.
  • Maintaining good oral communication.
  • Adhering to company rules, procedures, and brand guidelines.
  • Being aware of responsibilities regarding Health and Safety at Work, reporting hazards or accidents.
  • Attending training sessions and team meetings, contributing actively.
  • Maintaining quality standards of designated duties.
ADMINISTRATION:
  • Following SOPs, manuals, and recipes consistently.
  • Ensuring compliance with food handling and sanitation standards.
  • Handling food at proper temperatures.
  • Maintaining grooming and hygiene standards.
  • Keeping required food handling and sanitation certifications up to date.
  • Reporting hazardous situations or accidents to management.
COMMUNICATION:
  • Attending daily team briefings.
  • Demonstrating professional behavior to foster a positive work environment.
HR & TRAINING:
  • Training new Commis Chefs.
