Job description

To work closely with Chef de Partie but is also able to run a section of the kitchen on his/her own while ensuring that it runs according to performance standards established by the Executive Chef according to the restaurant’s procedures and standards.

GENERAL DUTIES AND RESPONSIBILITIES OF THE POSITION:

  1. Prepares, cooks, and presents dishes within the designated section and specialty.
  2. Assists the Chef de Partie, Sous Chef and Head Chef in improving and creating dishes and menus.
  3. Participates in ensuring that the work section is kept clean and in orderly fashion.

Responsibilities

1.Working according to the menu specifications by the Executive Chef.

2.Always keeping work area in hygienic conditions according to the rules set by the restaurant.

3.Controlling food stock and food cost in their sections.

4.Ensuring the highest standards and consistent quality in the daily preparation and keep up to date with the new products, recipes and preparation techniques.

5.Instructing and leading subordinates through their daily requirements in food preparation and actively taking part in set up of special functions.

6.Coordinating and participating with other sections of requirements, cleanliness, wastage and cost control.

7.Ensuring that all workstations in the kitchen are always cleaned are sanitized in accordance with the health and safety standard.

8.Complying with and enforcing sanitation regulations and safety standards.

9.Helping in the preparation and designing of all our food menus.

10.Resourcefully solving any issues that may arise and seizing control of any problematic situation.

11.Maintaining complete knowledge of all our food items, foods, outlets, services and hours of operation.

12.Spotting items that are about to expire and those that are about to go out of stock.

13.Prepare in advance food, beverage, material, and equipment needed for the service.

14.Assists in providing direction to the kitchen helpers, including commis, cooks, kitchen attendants and stewards.

15.Organize and set up the assigned section of the satellite kitchen as efficiently as possible to increase speed and maximize productivity.

16.Remains visible in the assigned section and assists team members in all aspects of the operation.

17.Work with supervisor and people services manager to ensure the departmental performance of staff productive.

18.Attends to guests’ requests and concerns in a polite manner.

19.Attending and reminding the kitchen colleagues to attend basic food safety and work safety training programs.

LEGAL RESPONSIBILITIES

  1. Ensuring that the standards required by local authorities and by the Management are always maintained in the areas specified above.
  2. Adhere to the company's policies and procedures.

Qualifications

1.High school diploma or equivalent

2.Progressive experience of 3-4 years within a hotel or restaurant having a large operation, preferably 2 years of experience in a similar position

3.Ability to work well in a team

4.Excellent listening and communication skills

5.Knowledge of best practices for safety and sanitation

6.Multitasking and organizational ability
