Job Purpose :

Under the guidance of the Finance & Business Support Manager, provide costing, control, and administrative support related to food and beverage costs to the F&B Department. Supervise inventory control, implement proper control systems for sales and costs, and oversee all charges and records of operating supplies in storerooms (excluding engineer storeroom). Ensure accurate recording of merchandise entering and leaving storerooms, supervise and train storeroom and receiving personnel, and maintain records in accordance with Intercontinental Hotel Group's policies and procedures.

Relationships :

1. Reports directly to Area Financial Controller.

2. Interacts with employees in Accounting, Stores, and Purchasing departments as needed.

3. Coordinates with Executive Chef, Sous Chef, F&B Manager, and suppliers.

4. Collaborates with hotel departments as required.

Key Responsibilities :

  1. Perform daily and monthly food and beverage sales reconciliation using POS-generated reports, explaining any discrepancies.
  2. Report daily and monthly F&B costs, highlighting variances, cost trends, slow-moving items, breakages, and losses.
  3. Analyze and report on variances related to costs and inventory management.
  4. Manage the hotel's monthly inventory process in accordance with hotel policies.
  5. Supervise daily receiving and storekeeping activities, ensuring proper documentation and support.
  6. Ensure implementation and enforcement of all cost control policies across departments.
  7. Prepare and distribute various cost reports.
  8. Verify processing of officer checks (duty meals, F&B entertainment checks) and prepare daily entertainment reports.
  9. Cost all recipes, inter-kitchen transfers, and food and beverage consumed by hotel employees.
  10. Define min/max and par stock levels, ensuring compliance.
  11. Control documentation and accounting of goods received and dispatched in hotel stores.
  12. Maintain close communication with the Executive Chef, F&B Manager, kitchen staff, and bartenders to minimize costs.
  13. Perform other duties as assigned by management.
  14. Ensure all tasks are completed accurately and within deadlines.
  15. Perform any other reasonable requests from supervisors or the hotel.
