The Role

This Cluster Beverage Director is based in a remote location, requiring adaptability and a commitment to excellence in a unique and dynamic environment.

All members of the Food & Beverage Department are responsible for ensuring that visitors to the hotel are delighted by the quality, creativity and variety of our food and beverage offerings in every area of the hotel, and that F&B is regarded as a strong point of differentiation for the hotel in its local market.

Key Areas of Responsibilities

  • Spearhead the pre-opening strategy and execution, overseeing all aspects of beverage operations setup, staffing, training, and operational readiness.
  • Manage all beverage outlet and banquet beverage operations, and the Lobby Lounge to guarantee efficient, profitable functioning within the hotel&aposs guidelines.
  • Maximize revenue through increased sales and efficient cost management.
  • Create, maintain, and update the beverage list periodically to ensure an original and attractive beverage offering that meets the needs of our hotel.
  • Stay informed of all Red Sea Global Hospitality Guest Incentive programs, and to market Beverage promotions periodically to improve guest satisfaction and increase sales revenue.
  • Establish effective inventory, requisition, beverage outlet pars, and control systems to uphold security and cost control in all beverage operation areas.
  • Forecast business demands accurately to ensure efficient staffing & beverage production.
  • Collaborate with the hotel training manager to identify training needs, develop, and deliver essential training for department employees to meet business requirements.
  • Ensure accurate supervision of employee time control and payroll systems by collaborating with the Accounting and HR department.
  • Manage all accounting and billing procedures in the outlets.
  • Oversee all aspects of employee management, including hiring and discipline, in collaboration with the Director of F&B.
  • Provide training to managers and supervisors on effective coaching and counseling, as well as the proper procedure for progressive discipline.
  • Ensure a safe work environment by adhering to all safety protocols.
  • Implement Red Sea Global Hospitalitys 39 points Sanitation Checklist by having all beverage service areas inspected monthly.
  • Manage assets for all outlet properties and facilities.
  • Plan a monthly preventative maintenance inspection.
  • Promote positive inter-departmental relations through open communication and cooperation.
  • Liaise with the Banqueting Department to support all requested events or functions.
  • Above all, to lead by example through a hands-on approach to motivate and inspire team members.
  • Perform any additional duties as required for operational smoothness.

Qualifications and Standards

The ideal candidate must have at least 23 years of experience as a Beverage Director in a complex organization, preferably within a luxury hospitality setting, with a strong background in pre-opening operations. Proven expertise in developing and executing high-end beverage programs, managing multiple outlets, and ensuring exceptional guest experiences is essential.
