Job Description

Financial Returns
- Initiate daily requisitions based on business, banquets, and occupancy, considering wastage, storage regulations, and food cost.
- Control labor costs within the assigned kitchen department.
- Manage food requisitions and orders to ensure proper quantities and quality.
- Assist in creating menus, recipes, costing, and food quality standards.
- Ensure accurate recording of all food transfers.
People
- Participate in kitchen and hotel-related training programs.
- Maintain cleanliness of fridge, freezer, cupboards, and work tables.
- Know all recipes, menus, and products related to the assigned section.
- Seek to improve knowledge and future growth within the company.
- Develop positive relationships with team members.
Guest Experience
- Ensure high standards of cleanliness and hygiene in the Butchery Section.
- Plan and supervise the production of poultry, meat, seafood, and fish, including à la carte orders, buffets, banquets, and outside catering, ensuring freshness and proper preparation.
- Maintain comprehensive product knowledge on ingredients, equipment, market trends.
- Handle guest requests effectively and resolve complaints appropriately.
Responsible Business
- Report unavailable items and propose alternatives.
- Perform related duties and special projects as assigned.
- Ensure proper use, cleanliness, and maintenance of Butchery equipment.
- Report injuries and accidents.
- Familiarity with HACCP standards and food hygiene regulations.
Accountability
- Meet HACCP requirements.
- Prepare food orders to standard.
Qualifications and Requirements
- Secondary school certificate or equivalent.
- Two years of experience as Assistant Head Butcher.
- English language proficiency; Arabic is an advantage.
- Computer skills (MS Office & internet).
