The Role

The Chief Baker is responsible for overseeing all baking operations within the pastry kitchen, ensuring the creation of high-quality baked goods that meet the resort’s luxury standards. This role involves managing the baking team, developing and refining recipes, and maintaining the highest standards of hygiene and presentation in all baked products.

Main Tasks

  • Team Management: Supervise, train, and motivate the baking team, including junior bakers and assistants, ensuring efficient workflow and adherence to recipes and techniques.
  • Recipe Development: Develop and refine recipes, incorporating seasonal ingredients and innovative techniques to enhance the pastry menu.
  • Quality Control: Monitor the quality and presentation of all baked goods, conducting regular inspections to ensure consistency and excellence.
  • Inventory Management: Oversee inventory levels of baking ingredients and supplies, managing orders and storage to ensure freshness and minimize waste.
  • Health and Safety Compliance: Ensure that all baking operations comply with health, safety, and sanitation regulations, including proper handling and storage of ingredients.
  • Menu Planning: Collaborate with the Executive Pastry Chef and other kitchen staff to plan and execute seasonal and special menu items.
  • Guest Interaction: Occasionally interact with guests to address special requests or dietary needs related to baked products and gather feedback on product quality.
  • Problem Resolution: Address and resolve any issues related to baking operations, staff performance, or ingredient quality in a timely and professional manner.
  • Communication: Maintain effective communication with the Executive Pastry Chef, other kitchen teams, and management to ensure smooth operations and timely service.

Building Successful Relationships

  • Executive Pastry Chef: Work closely with the Executive Pastry Chef to support the management of baking operations and achieve culinary goals.
  • Baking Team: Foster a positive and productive work environment, providing guidance, support, and training to team members.
  • Front-of-House Staff: Coordinate with front-of-house staff to ensure accurate and timely delivery of baked goods and address any special guest requests.
  • Management: Provide regular updates to management on baking operations, including inventory, staff performance, and guest feedback.
  • Suppliers: Communicate with suppliers to manage inventory levels, resolve any supply issues, and ensure the timely delivery of high-quality ingredients.

Skills/Knowledge Required

  • Baking Expertise: Advanced knowledge of baking techniques, dessert creation, and ingredient functions, with a strong understanding of current pastry trends.
  • Leadership Skills: Proven ability to lead, train, and manage a team in a high-pressure environment while maintaining a focus on quality.
  • Organizational Skills: Strong organizational skills with the ability to manage multiple tasks and prioritize effectively in a busy kitchen.
  • Attention to Detail: Keen attention to detail to ensure precision in baking and presentation.
  • Communication Skills: Excellent verbal communication skills for effective interaction with staff, guests, and management.
  • Creativity: Ability to develop innovative and visually appealing baked goods that enhance the guest experience.

Physical Requirements

  • Physical Tasks: Ability to stand for long periods, lift and carry heavy items, and perform tasks that require dexterity and precision.
  • Composure Under Pressure: Maintain professionalism and composure while managing multiple tasks and handling high-pressure situations.

Qualification Standards

  • Education: Culinary degree with a focus on baking or equivalent qualification preferred.
  • Experience: Minimum of five years of experience in a professional baking environment, with at least two years in a supervisory or leadership role, preferably in a luxury hospitality setting.
  • Grooming: All kitchen staff must maintain a neat, well-groomed appearance (specific standards will be provided).
