Job description

Job Responsibilities
  • Manage all bars and banquet beverage operations, ensuring a smooth running, profitable operation within the framework of the Hotel.
  • Create and maximize zero based non-alcoholic beverages in all outlets while adding in creativity and new offerings.
  • Maximize revenue through increased sales and efficient cost management.
  • Create, maintain and periodically update the Beverage lists to ensure an original and attractive beverage offering that meets the needs of our hotel.
  • Effectively drive beverage promotional activity in the outlets to increase average spends and drive beverage revenue while ensuring effective cost control.
  • Be aware of all Anantara Guest Incentive programs and periodically market beverage promotions to improve guest satisfaction and increase sales revenue.
  • Ensure that proper inventory, requisition, bar pars and control systems are in place to maintain security and cost control of all beverage operations areas.
  • Accurately forecast business demands to ensure efficient team members & beverage production.
  • With the outlet managers, identify training needs and develop and deliver the required training for department team members to meet the needs of the business. Support the training of Departmental Trainers to continue to improve hotel service levels, and implement a daily departmental training program.
  • Be responsible for all accounting and billing procedures in the outlets.
  • Be responsible for all aspects of bar management.
  • Train subordinate bartenders and bar supervisors in effective “coaching and counseling” and the correct process of progressive discipline.
  • Be responsible for maintaining outlets safety and sanitation standards at all times.
  • Enforce Anantara’s Sanitation Checklist by having all bar service areas inspected on a monthly basis.
  • Be responsible for asset management of all outlet properties and facilities.
  • Conduct a preventative bar maintenance inspection on a monthly basis.
  • Promote positive inter-departmental relations through candid communication and cooperation.
  • Work with the Banqueting Department to support all requested functions.
  • Above all, lead by example through a “hands on” approach to motivate our team members to excel.

Qualifications

  • Minimum 12 months experience in a similar role, preferably including 5 star experience.
  • Willingness to be a sales person and marketer of the outlets.
  • Desire and ability to train and develop staff.
  • Maintains awareness of industry trends in service, product and presentation.
  • Diploma or certification in Hospitality management or its equivalent with formal bartending training.
