About the role

As a Head Baker, you are responsible for operating the bakery section of the kitchen while working closely with the Executive Pastry Chef. A Head Baker will also be required to plan production and develop seasonal offerings.

Responsible to create high quality bakery dishes with the standard recipes and presentations in order to maintain quality standards and consistency of product. Also assist in production and maintenance of par stocks of pastry and dessert with proper rotation of products and maintain highest cleanliness and hygiene standards in the pastry and bakery section.

What you will do

  1. Manage all day-to-day operations of the bakery section of the kitchen.
  2. Able to produce all baked goods including but not limited to artisan breads and rolls, muffins, laminated Danish, laminated croissants and doughnuts etc.
  3. Able to develop, design, or create new ideas and items for Bakery.
  4. Ensure excellent quality throughout the bakery items offerings.
  5. Follow proper handling and right temperature of all food products.
  6. Decorate bakery items using different types of icings, toppings etc. and ensure the food presentation will be beautiful and exciting.
  7. Coordinate activities of cooks and workers engaged in food preparation.
  8. Supervise and coordinate all bread preparation and presentation.
  9. Check the quality of raw and cooked food products to ensure that standards are met.
  10. Assist in determining how food should be presented and create decorative food displays.
  11. Monitor stocks for baking ingredients such as flour, sugar etc., and make appropriate orders within par stock.
  12. Check quality of materials and condition of equipment and devices used for cooking and baking.
  13. Report all equipment problems and maintenance issues, safety hazards, or unsafe practices and procedures to supervisor immediately.
  14. Attend all scheduled employee meetings and bring suggestions for improvement.
  15. Must possess a positive attitude and have the ability to work with a variety of people and in cooperation with co-workers efficiently and effectively.
  16. Able to recognize superior quality products, presentations, and flavors.
  17. Ensure compliance with all applicable laws and regulations.
  18. Operate and maintain all department equipment and report malfunctions.
  19. Maintain cleanliness and organization in all work areas.
  20. Encourage and build mutual trust, respect, and cooperation among team members.
  21. Serve as a role model to demonstrate appropriate behaviors.
  22. Ensure compliance with food hygiene and health and safety standards.
  23. Guide and motivate pastry assistants and bakers to work more efficiently.
  24. Maintain a lean and orderly cooking station and adhere to health and safety standards.
  25. Ensure Culinary Standards and Responsibilities are met for the Pastry Team.
