Job description

POSITION OBJECTIVE: Responsible for the basic preparation in a given section in the kitchen.

Key Responsibilities:
  1. Cooperates and works together with the senior cook in the production of food in his section.
  2. Assists the senior cook in performing his/her duties efficiently.
  3. Collects required food items from the stores and the butchery.
  4. Prepares mise-en-place according to direction given by the section head.
  5. Follows the rules and regulations of hygiene and sanitation in the kitchen.
  6. Attends training classes and keeps records of new recipes and cooking procedures.
  7. Maintains equipment in good, clean condition and ensures repairs and maintenance are regularly carried out.
  8. Maintains food cost within the budget by controlling waste without compromising standards.
  9. Performs any other duties which may be allocated from time to time.
Health, Safety and Security:
  1. Maintains the required standard of operational hygiene according to cleaning rotas at all times.
  2. Is aware of the Restaurant policies and procedures relating to health, hygiene, and fire life safety and ensures direct reports do the same.
  3. Familiarizes with emergency exits and evacuation procedures.
General:
  1. Complies with the company's corporate code of conduct.
  2. Familiarizes with the company values and models desired behaviors.
  3. Performs tasks as directed by the Management in pursuit of the achievement of business goals.
