Job summary

Risla Collection Inc. is seeking a Kitchen Butcher to support daily operations in our restaurant kitchen in Taytay, Rizal. You will cut, trim and prepare meat, ensure proper hygiene, and assist during busy service hours.

The role requires knowledge of meat cuts, HACCP/GMP familiarity, and the ability to work weekends. At least 2 years in a similar role is preferred; college level or culinary training is advantageous.

Qualifications

• At least two years of experience as a kitchen butcher in a reputable restaurant or hotel.
• Knowledge of meat cuts and preparation techniques.
• Willingness to work weekends and holidays.
• Knowledge of workplace and personal hygiene.
• Knowledge of Food Safety practices; HACCP, Serv Safe and GMP are an advantage.
• Familiar with different meat parts and cuts.
• Knowledge on Inventory Management System (IMS).
• Good oral and written communication; can understand English and Tagalog.
• Familiar with ala carte service.
• Must project a positive and professional image.

Responsibilities

• Wash, peel, cut, slice, and portion ingredients (vegetables, meats, seafood, etc.).
• Prepare raw materials needed by cooks before service starts.
• Assist in basic cooking tasks as instructed.
• Receive, check, and store kitchen deliveries properly.
• Ensure ingredients are available and ready for use.
• Refill stocks at prep stations during service.
• Arrange and organize ingredients and tools in preparation areas.
• Keep prep tables and storage areas neat and orderly.
• Clean and sanitize utensils, equipment, and work areas.
• Follow food safety and hygiene standards at all times.
• Assist cooks and chefs in rush hours.
• Transport ingredients, tools, and prepared items within the kitchen.
• Proper disposal of kitchen waste and minimizing waste.
