ARTEMISPLUS EXPRESS INC. in Metro Manila is seeking a Commissary Director to provide leadership and strategic direction for end-to-end operations, ensuring safe, cost-effective production and distribution of food products across the commissary network.
You will oversee production, central kitchen, inventory, quality assurance, equipment, logistics, and compliance with GMP/HACCP, driving KPIs and continuous improvement while coordinating with Purchasing, Finance, and HR to meet service targets.
The Commissary Director provides overall leadership and strategic direction for the commissary's end-to-end operations, ensuring the efficient, cost-effective, and timely production and distribution of high-quality food products. The role oversees production, food safety and quality, inventory, manpower, equipment, logistics coordination, and operational performance while ensuring compliance with company standards and applicable regulatory requirements.
Provide overall leadership and strategic direction for commissary operations, ensuring efficient, safe, and cost-effective food production and distribution.
Oversee daily operations covering production, central kitchen, warehouse, purchasing coordination, inventory, quality assurance, food safety, and logistics.
Develop and implement operational strategies, systems, and procedures to achieve production targets, service levels, quality standards, and business objectives.
Ensure timely and accurate production of food products based on approved forecast, demand, production plans, and outlet requirements.
Monitor production capacity, manpower utilization, productivity, equipment efficiency, and overall operational performance.
Establish and monitor Key Performance Indicators (KPIs) for production, quality, cost, productivity, wastage, yield, and service delivery.
Ensure strict compliance with food safety, sanitation, GMP, HACCP principles, occupational safety, and applicable regulatory requirements.
Lead initiatives to maintain consistent product quality, food safety, portion control, specifications, and standard recipes.
Oversee inventory management, including raw materials, packaging materials, finished goods, and other commissary supplies.
Monitor food cost, material usage, wastage, spoilage, yield, and production variances, and implement corrective actions to control operating expenses.
Work closely with Purchasing, Finance, Quality Assurance, Operations, HR, and Logistics to ensure smooth and efficient commissary operations.
Ensure proper planning and utilization of manpower, including staffing requirements, scheduling, training, performance management, and employee development.
Lead and develop department heads, supervisors, and commissary personnel through coaching, performance management, and leadership development.
Establish and maintain effective standard operating procedures (SOPs), work instructions, controls, and operational policies.
Monitor and address production delays, equipment breakdowns, quality issues, inventory variances, and other operational risks.
Ensure proper preventive maintenance and availability of production equipment and facilities in coordination with Engineering/Facilities teams.
Analyze operational reports and financial data and provide management with recommendations for improvement and cost optimization.
Lead continuous improvement initiatives focused on productivity, efficiency, quality improvement, waste reduction, and cost savings.
Ensure proper coordination of finished goods dispatch and delivery to outlets and clients according to approved schedules and service requirements.
Conduct regular operational reviews, audits, and site inspections to ensure compliance with company standards.
