Job summary

Vikings Group of Companies is seeking a Chef de Partie for the Carving Station to join our culinary team at NYX, Opus Mall in Quezon City, Metro Manila. This full-time role focuses on managing the carving station and delivering high-quality carved meats with precision and presentation.

You will oversee mise en place, ensure food safety, train junior staff, and collaborate with the kitchen to maintain service flow during peak hours.

Qualifications

• Proven experience as a Chef de Partie with carving station management.
• Advanced culinary skills in meat carving, temperature control and presentation.
• Strong knowledge of food safety and hygiene standards.
• Excellent organizational and time-management skills.
• Leadership experience with ability to train, motivate and manage kitchen staff.
• Attention to detail and commitment to high-quality results.
• Culinary certification or formal training from a recognized culinary institution is highly desirable.
• Experience in high-volume buffet or restaurant setting is advantageous.
• Flexibility to work shifts including weekends and public holidays.

Responsibilities

• Oversee and manage all operations of the carving station, including preparation, cooking and carving of various meats and proteins.
• Ensure consistent quality, portion control and presentation of all carved items according to Vikings Group standards.
• Prepare and maintain mise en place for the carving station, ensuring equipment and ingredients are readily available and properly organized.
• Adhere strictly to all food safety regulations, hygiene protocols and health and safety guidelines.
• Monitor and manage food costs whilst minimizing wastage through efficient stock rotation and preparation techniques.
• Train, supervise and mentor junior kitchen staff assigned to the carving station, fostering a culture of excellence and continuous improvement.
• Collaborate effectively with other stations and kitchen team members to ensure smooth service flow during service periods.
• Contribute to menu development and refinement through creative ideas and technical expertise.
