Duties and Responsibilities
- Prepare a variety of meats, seafood, poultry, vegetables, and other food items for cooking in broilers, ovens, grills, fryers, and other kitchen equipment.
- Assume responsibility for the quality of products served.
- Check incoming produce, ensuring compliance with order sheets, receiving records, and purchasing specifications.
- Follow standard portion sizes, cooking methods, quality standards, and kitchen rules and guidelines consistently.
- Follow proper plate presentation and garnish setup for all dishes.
- Assist in controlling the outlet operational budget to maximize profitability.
- Record guest complaints, requests, and solutions, reporting them to the Executive Chef or Sous Chef.
- Adhere to Six Senses’ policies on fire safety, hygiene, and safety.
- Keep all equipment and the working area clean and in good condition.
- Maintain and exceed performance benchmarks according to Six Senses standards of service and operation.
- Strictly adhere to LQA standards and guest comments.
Qualifications
- High school diploma or equivalent, with 2-4 years of kitchen experience in a full-service outlet or similar setting; hospitality diploma/degree preferred.
- Knowledge of broiler equipment, meat and fish cookery, proficient knife skills, and understanding of farm-to-table concepts.
- Alcohol awareness certification and/or food handler permit or health/food safety card as required by local regulations.
- Proficiency in MS Office (Word, Excel, PowerPoint, Outlook).
- Strong leadership skills and ability to thrive in multicultural teams.
- Specialized in fast-paced A la carte operations with knowledge of Mediterranean cuisine.
- Experience in cold, hot, pasta, and grill kitchen sections.
- Excellent command of English, with the ability to live in remote locations and travel on single status.
