Job summary

Mandarin Oriental Muscat is seeking a Sous Chef – Italian Cuisine to lead Essenza Italian cuisine in a luxury hotel environment. You will collaborate with the Chef de Cuisine to craft dishes, oversee daily kitchen operations, and mentor the team to uphold top-tier quality.

With expertise in authentic Italian techniques and strong leadership, you will ensure safety, consistency, and innovation across all Italian menus, while maintaining MOHG standards and guest satisfaction.

Qualifications

• Strong expertise in authentic Italian techniques including regional dishes, pasta and sauces.
• Proven ability to lead a culinary team in a fine-dining setting.
• Solid understanding of food safety, hygiene, and kitchen management.

Responsibilities

• Collaborate with Chef de Cuisine to create dishes and promotions.
• Ensure plating guides are accurate and followed to standards.
• Maintain authenticity of Essenza Italian cuisine per Chef de Cuisine standards.
• Oversee daily ordering and requisition of ingredients.
• Provide leadership and support to kitchen staff at all times.
• Assist in preparing weekly staff rosters.
• Ensure compliance with food safety standards and internal audits.
• Oversee cleanliness and maintenance of the Essenza kitchen.
• Train staff to keep up-to-date with techniques and trends.
• Stay updated with global food trends to keep Essenza innovative.
