Job summary

Mandarin Oriental Muscat is seeking an experienced Italian cuisine-focused chef to lead Essenza kitchen. You will develop menus, oversee plating standards, and manage daily ingredient ordering while ensuring exceptional quality and authenticity.

You will supervise staff rosters, uphold MO Muscat standards, and drive food safety and guest satisfaction in a luxurious dining environment.

Qualifications

Strong experience in authentic Italian culinary techniques and regional dishes.
Proven ability to lead a culinary team in a high-end, fine-dining environment.
Excellent understanding of food safety, hygiene, and kitchen management practices.

Responsibilities

Collaborate with the Chef de Cuisine to create dishes for promotions and events.
Ensure plating guides are accurate and followed according to dish description and standards.
Maintain authenticity of all Italian cuisine prepared per Chef de Cuisine standards.
Oversee daily ordering and requisition of ingredients.
Provide leadership and support to all kitchen colleagues.
Prepare weekly staff rosters and assist with administrative tasks.
Adhere to food safety standards defined by MO Muscat and local regulations.
Oversee Essenza kitchen cleanliness and display safety in line with standards.
Train staff in Essenza Italian cuisine and share expertise with colleagues.
Stay updated with global food trends to keep Essenza innovative.
