Job description

Duties and Responsibilities

As Commis Butcher, I will be responsible for the efficient operation of the following tasks:

  1. Focus on the continual rejuvenation of the culinary experience.
  2. Separate primal cuts from carcasses, and efficiently trim, cut, and boning into retail cuts.
  3. Maintain proper portion control when preparing retail cuts.
  4. Establish purchasing practices aligned with Six Senses' nutrition and sustainability standards.
  5. Promote a cost-focused approach through training and education.
  6. Operate within all legal, statutory, and financial requirements, ensuring proper documentation, reporting, security, safety, and service standards are met.
  7. Adhere strictly to LQA standards and guest feedback to ensure quality service.
Qualifications

To succeed as a Commis Butcher, I must possess the following qualifications, skills, and experience:

  • High school diploma or equivalent, with at least 3 years of kitchen experience in a full-service outlet or similar setting. A hospitality diploma or degree from a recognized school is preferred.
  • Knowledge of broiler equipment, meat and fish cookery, proficient knife skills, and understanding of farm-to-table concepts.
  • Certification in alcohol awareness, food service permits, or valid health/food handler cards as required locally.
  • Excellent command of written and spoken English, with the ability to live in a remote location for extended periods and travel on single status.
