Duties And Responsibilities
As Chef De Cuisine, I will support the Executive Chef and assume responsibility for the efficient operation of the culinary department, including:
- Rejuvenating the culinary experience continually.
- Assessing menus and wine lists to remain relevant and aligned with Eat With Six Senses practices.
- Establishing purchasing practices that meet the requirements of our nutrition and sustainability platforms.
- Instilling a cost-focused philosophy through training and education.
- Ensuring compliance with legal, statutory, financial, safety, and security requirements, along with proper documentation, reporting, and budget controls.
- Adhering strictly to LQA standards and guest feedback.
QualificationsTo succeed as Chef De Cuisine, I must have the necessary qualifications, technical skills, and experience in a similar role within luxury hotels, including:
- A high school diploma or equivalent and at least 5 years of kitchen experience in a full-service outlet or similar setting. A diploma in Culinary Arts or related field is preferred.
- Knowledge of broiler equipment, meat and fish cookery, proficient knife skills, and understanding of farm-to-table concepts.
- Alcohol awareness certification and/or food service permit or valid health/food handler card as required by local regulations.
- Excellent command of written and spoken English, with the ability to live in remote locations for extended periods and travel on single status.
