Qualifications

• Hold a trade qualification or 3+ years as Sous Chef in a premium kitchen.
• Experience managing kitchen operations across multiple outlets.
• Strong technical cooking skills with high culinary standards.
• Experience leading and developing kitchen teams.
• Solid food cost management and stock control knowledge.
• Current Food Safety certificate and WHS knowledge.
• Flexible to work a rotating roster including evenings and weekends.

Responsibilities

• Manage and coordinate food production across hotel kitchen outlets.
• Supervise food preparation, mise en place and service readiness.
• Monitor rosters and delegate duties across sections.
• Control food cost through stock rotation and ordering.
• Hire, train and develop kitchen staff.
• Maintain cleanliness, safety and WHS standards.
• Liaise with F&B managers to coordinate operations.
