About the role

Kota Kinabalu Marriott Hotel is seeking an experienced Sous Chef - Western to join our talented culinary team. In this full-time role, you will be responsible for assisting the Executive Chef in managing the day-to-day operations of the hotel's Western cuisine kitchens. This is an excellent opportunity to showcase your culinary expertise and passion for delivering exceptional dining experiences to our guests.

What you'll be doing

Oversee the preparation and execution of high-quality Western dishes for our restaurants, banquets, and events

Ensure adherence to food safety and sanitation standards in the kitchen

Assist in menu planning, recipe development, and cost control

Manage and mentor a team of chefs and kitchen staff, providing guidance and training

Collaborate with the Executive Chef to develop and implement new culinary concepts and initiatives

Participate in inventory management and ordering of supplies

Foster a positive and productive work environment in the kitchen

What we're looking for

Minimum 5 years of experience as a Sous Chef or in a similar role within a high-volume, upscale hotel or restaurant

Formal culinary training or certification, such as a degree or diploma in Culinary Arts

Proven expertise in Western cuisine, including a strong understanding of flavors, techniques, and presentation

Excellent leadership, communication, and team-building skills

Proficient in inventory management, cost control, and budget planning

Passion for creating exceptional dining experiences and a commitment to delivering high-quality, innovative cuisine

Ability to work effectively in a fast-paced, dynamic environment
