RESEARCH & DEVELOPMENT EXECUTIVE (RYOYU BAKING)

Job Purpose:

  • Assist in Bakery Development of myNEWS Ryoyu Baking.

Job Responsibilities:

  1. Conduct product development, including designing products, creating prototypes (weighing, preparation, shaping including Danish pastry, baking, simple packaging), and inspecting prototypes (with QA).
  2. Attend product development meetings, prepare samples for testing, and record minutes.
  3. Produce product prototypes upon request.
  4. Manage materials related to manufacturing.
  5. Conduct testing on dough and develop new dough recipes to improve product quality.
  6. Examine product prototypes and check expiration dates.
  7. Create test runs, specifications, manufacturing process manuals, and product information.
  8. Coordinate inspection contents, determine expiration dates, and provide product info to JAKIM.
  9. Perform sensory evaluations regularly to ensure product quality.
  10. Research new ingredients, request samples, and conduct tests.
  11. Stock ingredients and share inventory info with purchasing, considering import customs clearance periods.
  12. Survey market trends at least twice a month.
  13. Participate in food exhibitions and study sessions for skill enhancement.
  14. Purchase competitor products (e.g., from FamilyMart) and create product catalogues.
  15. Support negotiations with new business partners, including product design, sampling, and improvements for launches.
  16. Assist with ad hoc tasks assigned by superiors.

Requirements:

  1. Experience in bread making processes such as weighing, preparation, shaping, and baking.
  2. Proficiency in computer skills, especially Microsoft Office (Excel, Word).
  3. Ability to work independently and as part of a team.
  4. Excellent time management and problem-solving skills.
  5. Good hygiene practices suitable for a food manufacturing environment.
  6. Valid typhoid injection card.
  7. Willingness to work in shifts.
  8. Capability to handle multiple tasks simultaneously in a team setting.

Preferred Qualifications:

  1. 3 to 5 years of baking experience, including Danish pastry.
  2. Fluency in English and Malay.
  3. Relevant certificates in bread making.
