Job Description

This position is responsible for the production of all pastries, desserts, breads and other baked products.

  • Monitor food quality and consistency to ensure all dishes served to guests meet the highest standards.
  • Perform yield testing and product identification; ensure proper rotation and labeling in accordance with food produce specifications.
  • Oversee daily dry and general stores, ensuring all perishable goods delivered comply with written product specifications, with extra attention to imported and seasonal items.
  • Conduct weekly kitchen walkthroughs and collaborate with Chief Steward to maintain kitchen sanitation and ensure engineering maintenance standards are met.
  • Provide hands-on demonstrations of various international cuisines through food tastings as needed.
  • Monitor food orders to minimize wastage and ensure efficient product utilization at all times.
  • Enforce strict control over kitchen access, ensuring only authorized personnel enter and follow occupational health department guidelines.
  • Ensure all equipment and perishable items are stored in designated areas following hygienic standards.
  • Coordinate closely with the receiving department and storeroom to confirm that all goods received meet the hotel’s quality and specification standards.
  • Update recipes, costing, and menu plans for ongoing promotions.

Qualifications

  • Certificate or diploma from a recognized Culinary School
  • Minimum 3 years of relevant experience in a similar role
  • Good proficiency in spoken and written English
  • Strong knowledge of food safety and hygiene standards
  • Ability to work efficiently under pressure in a fast-paced kitchen environment
