Job Description

The Hygiene Manager is responsible for maintaining and upgrading sanitation and hygiene standards to ensure all food served is free from microbiological, chemical, and physical contamination, and all work areas meet hygiene and sanitation requirements.

  1. Propose and uphold minimum hygiene standards across all work areas, stores, receiving, and disposal zones.
  2. Maintain effective records related to the hotel’s sanitation and hygiene programs.
  3. Develop and update a methodology manual for hygiene practices, accessible to staff for review.
  4. Coordinate and promote effective communication among hotel staff regarding hygiene standards.
  5. Ensure the cleanliness and organization of the office/section area, promoting an efficient workflow.
  6. Perform special assignments and projects as directed by superiors.
  7. Conduct and chair the FSMS Monthly Meeting.
  8. Monitor and assist in procedures to maintain an excellent hygienic environment.
  9. Participate in the hotel’s Sanitation Team, conducting monthly inspections and generating reports.
  10. Liaise with external agencies (laboratories, government bureaus, health practitioners) on sanitary matters.
Qualifications

To succeed in this role, candidates should demonstrate the following:

  • At least 2-3 years of experience as a Hygiene Officer in a hotel or large restaurant, preferably within the hotel industry.
  • Self-motivated, capable of managing multiple projects and working under pressure.
  • Excellent communication and guest relation skills, proactive problem-solving abilities.
  • Creative with an international culinary focus, meticulous attention to detail.
  • Team player with strong team-building skills and effective communication across all levels.
  • Ability to motivate and empower team members, fostering innovation.
  • Personable, reliable, and approachable with a positive attitude and flexibility.
  • High integrity, strong leadership qualities, and the ability to nurture team development.
  • Good personal grooming and presentation.
  • Respect for local culture and adaptability to changing environments.
  • Proficient in computer skills and experienced in skills training delivery.
  • Knowledge of current culinary trends, kitchen hygiene practices, and occupational health standards.
  • Relevant certifications such as a Bachelor of Food Science, Food Handler Trainer, HACCP, or Train the Trainers.
  • Full working rights in Malaysia.
