Job description

Job Description: Executive Sous Chef

Assist the Executive Chef in implementing and maintaining the kitchen and stewarding policies to ensure efficient, profitable, and standards-compliant operations.

The Executive Sous Chef reports to the Executive Chef and is responsible for ensuring adherence to hygiene and food quality policies, with a focus on continuous improvement.

Key responsibilities include:

  1. Planning staffing and food delivery during events.
  2. Managing food costs and purchases based on market lists.
  3. Training team members on various topics.
  4. Controlling wastages, labour costs, food production, menu planning, layout, and food flow during events.
  5. Conducting weekly meetings and walk-arounds with the team and relevant managers.
  6. Participating in international and domestic competitions.
  7. Collaborating with the executive chef on overseas exposure opportunities for team members.
  8. Training on latest menus and proposal techniques.
  9. Ensuring smooth kitchen operations and attending operational meetings.
  10. Creating menus aligned with sales and client needs.
  11. Assuming responsibilities in the absence of the executive chef.
  12. Achieving departmental objectives and managing risks related to BMS.
  13. Maintaining high culinary standards and introducing innovative concepts.
  14. Supporting the executive chef and managers in various tasks.

**Selection Criteria:**

  • Extensive experience in large food operations.
  • Excellent communication skills and computer literacy.
  • Experience with quality, food safety, or environmental management systems.
  • Previous senior chef or equivalent experience, preferably 15+ years in first-class hotels.
  • Possession of a Certified Cooks Diploma is preferred.
