Position: Executive Sous Chef

An Executive Sous Chef will manage and lead the team to ensure smooth culinary operation and maximize the level of standards in the hotel’s kitchen.

What will I be doing?

As the Executive Sous Chef, you will be responsible for performing the following tasks to the highest standards:

  1. Plan, prepare, and implement high-quality and well-crafted food and beverage products, especially breakfast.
  2. Ensure delivery of food quality for the team member dining.
  3. Work seamlessly with recipes, standards, and plating guides.
  4. Maintain all HACCP aspects within the hotel operation.
  5. Oversee the cleanliness, hygiene, and maintenance of the kitchen and undertake steps necessary to maintain the highest standards in this area.
  6. Ensure team members are well-trained and foster their development for career growth.
  7. Provide clear direction and guidance to team members.
  8. Participate in quality initiatives such as daily chef briefings and monthly team meetings to improve culinary operations, meet targets, and facilitate communication.
  9. Assist in inventory taking.
  10. Be knowledgeable of hotel occupancy, forecasts, and achievements.
  11. Prepare menus as requested, in a timely manner.
  12. Develop new dishes for food tastings.
  13. Collaborate with the Stewarding department to ensure high cleanliness levels and low loss and breakage.
  14. Purchase and control production.
  15. Organize and participate in all kitchen production activities.
  16. Check and follow up on the assembly of ingredients and equipment for menus, maintaining standards of recipes, portion control, and costing.
  17. Exercise maximum control on wastage to achieve profitability.
  18. Ensure all equipment is in good working order.
  19. Establish and update recipes and costings.
  20. Monitor food quality and quantity to ensure economical ingredient usage.
  21. Contribute to new menus and seasonal food concepts with the Hotel Manager.
  22. Ensure food prepared by team members meets standards and make adjustments as needed.
  23. Oversee overall food operation to ensure timely and correct preparation of food items.
  24. Control food costs to maximize outlet profit and guest satisfaction.
  25. Perform other duties as assigned.
What are we looking for?

An Executive Sous Chef serving Hilton Brands is committed to our Guests and collaborates with Team Members. To succeed, you should demonstrate:

  • High school diploma or equivalent.
  • At least 5 years as Head of Kitchen in a focused service hotel with high standards.
  • Proficiency in English and the local language, both verbal and written.
  • Effective leadership skills, including performance management.
  • Experience in providing effective training.
  • Valid health certificate.
  • Experience in a similar role within international chain hotels.
  • Technical education in hospitality or culinary arts preferred.
