Job summary

A leading brewery company is seeking a Brewing Operator for their operations. The role involves managing the brewing process, ensuring hygiene standards, and recording fermentation parameters. Ideal candidates should hold a degree in relevant fields and have at least one year of experience, or fresh graduates are welcome. The position requires flexibility in working hours and offers a full-time permanent contract with shift rotations.

Job description

Responsible for yeast management, hygiene control for the selected zone, and fermentation process control.

Responsibilities:

  1. Manage brewing process (BH3 or BH2), including material intake, transfer, operation (BOTEC and SCADA), additives addition, and Cleaning In Place (CIP) of vessels and lines. Support from Senior Executive when necessary.
  2. Record daily temperature and analyze fermentation parameters.
  3. Maintain fermentation records, including yeast management, Plato, BU, color, VDK, and alcohol levels, along with deviation escalation and corrective actions.
  4. Assist in wort cooling, sampling, and blending recovered beer.
  5. Order additives and raw materials for cellar operations.
  6. Manage yeast storage tanks and perform yeast line cleaning using auto programs with manual connection.
  7. Conduct yeast pitching during wort cooling.
  8. Ensure hygiene standards are maintained in the assigned zone.
  9. Adhere to safety guidelines and company policies during plant operation.
  10. Comply with Carlsberg Operation Manual (COM) guidelines and participate in continuous improvement initiatives.
  11. Conduct self-audits based on COM standards.

Requirements:

  • Bachelor's Degree or Diploma in Food Technology, Biotechnology, or Biochemistry.
  • At least 1 year of experience in a food manufacturing environment; fresh graduates are encouraged to apply.
  • Flexibility to work on Saturdays and Sundays as needed.
  • Leadership skills to motivate and achieve KPIs.
  • Responsible, independent, and well-organized.
  • Basic science knowledge; certification in IGB is an advantage.
