About the role
As the CHIEF COOK (Oil & Gas Vessel) at Far Frontier Energy Services Sdn. Bhd., you will play a crucial role in ensuring the smooth and efficient running of the catering operations on an oil and gas vessel based in Sabah. This full-time position requires a highly experienced and skilled chef who can manage a team and provide exceptional culinary offerings to the crew.
Follow all vessel, Client, and Company policies and procedures.
Maintain a safe, healthy, and environmentally friendly work environment.
Follow and enforce safe working practices, PPE rules, and injury prevention principles.
Prepare Job Safety Analyses (JSAs) for the galley and participate in toolbox talks.
Join safety drills, musters, and training exercises.
Speak, read, write, and understand English.
Follow safe working practices.
Maintain and promote good personal hygiene.
Monitor any illness that could affect safe food handling.
Follow MLC rules for food and galley safety and hygiene.
Run the catering department efficiently and economically.
Assign daily tasks to catering staff.
Plan provisions for voyages and periods efficiently.
Manage stock and store food, hardware, and cleaning supplies correctly.
Prepare accurate food inventories and orders.
Help control the food budget and reduce waste.
Test and maintain fresh drinking water quality.
Prepare monthly meal menus with the CTO.
Consider crew’s special dietary and religious needs.
Gather crew feedback for food and service improvements.
Keep all food areas, equipment, and utensils clean and hygienic, including:
Galley, pantries, dishwashers, and food prep areas.
Stores, fridges, freezers, and storerooms.
Messrooms and their appliances.
Garbage bins and proper waste disposal.
Alleyways and public areas.
Dispose of garbage, food waste, and cooking oils properly, logging all waste.
Operate food equipment following MARPOL rules.
Take monthly physical inventory using FIFO (First In, First Out) system.
Check 'best by' dates on food and report any quality or inventory issues.
Report any galley equipment problems.
Prepare and submit stock and meal reports with the Master.
Ensure full handover from previous cook including:
Galley equipment status.
Menus.
Cleaning routines and task assignments.
Help with environmental compliance beyond the galley.
Assist with ship security.
Ensure proper shift handover and takeover.
Stop any unsafe or unhygienic actions in accommodation, galley, mess-room, or food storage.
Reject any food materials that do not meet hygiene standards.
Act as deputy to the CTO and take over if the CTO is unable to perform duties.
Qualifications:
Certificate of Proficiency - Offshore Cook
Experience:
Minimum 2 years offshore cooking in a similar role
Training and Certification:
Valid Passport (1+ year validity)
Seaman Book
STCW Basic Training
STCW Ship Security Awareness
Petronas Offshore Medical Certificate
CA-EBS (OPITO approved)
