Position: Chef de Partie

A Chef de Partie prepares and cooks according to standard procedures, recipes, photographs, and given instructions, assisting the Sous Chef in training team members. The role participates in product development and ensures the smooth operation of the kitchen.

What will I be doing?

As Chef de Partie, you will be responsible for performing the following tasks to the highest standards:

  • Prepare food for guests and team members efficiently, economically, and hygienically as per standard recipes and procedures.
  • Assist the Chinese De Cuisine/Chinese Chef in the day-to-day operation of the kitchen and help maintain a high standard of food preparation and presentation.
  • Plan, prepare, and implement high-quality food and beverage products, and set-ups in all areas and in the restaurants.
  • Work seamlessly with recipes, standards, and plating guides.
  • Maintain cleanliness and hygiene according to safe procedures and established FSMS standards.
  • Maintain all HACCP standards within the hotel operation.
  • Use all equipment, tools, and machines appropriately.
  • Work for off-site events when tasked.
  • Complete tasks and jobs outside of the kitchen area when requested.
  • Assist in inventory taking.
  • Be knowledgeable of hotel’s occupancy, events, forecasts, and achievements.
  • Prepare menus as requested.
  • Work closely with the Stewarding department to ensure high levels of cleanliness and low levels of lost and breakages.
  • Respond effectively to guest requests.
  • Learn and adapt to changes.
  • Maintain a professional and positive attitude towards team members and supervisors.
  • Adhere to hotel rules and team member handbook, ensuring team members under your supervision do so as well.
  • Coordinate, organize, and participate in all kitchen production.
  • Check and follow-up on ingredients for menus, maintaining standards of recipes, portion control, and costing.
  • Monitor food quality and quantity to ensure economical ingredient usage.
  • Ensure food prepared by team members meets standards and make adjustments as needed.
  • Monitor overall food operation to ensure timely and correct preparation.
  • Promote teamwork to achieve departmental goals.
  • Carry out other duties as assigned.

What are we looking for?

A Chef de Partie working for Hilton Brands represents the company to our guests and collaborates with team members. To succeed in this role, you should have:

  • High school diploma.
  • At least 3 years of experience in a 5-star hotel or high-standard restaurant.
  • Minimum of 1 year as Demi Chef de Partie or equivalent in an international hotel.
  • Technical education in hospitality or culinary arts preferred.
  • Valid health certificate.
  • Knowledge of Western or Chinese cuisine.
  • Proficiency in steaming, baking, and soup techniques (for Chinese/Banquet Kitchen).
  • Experience with seafood and meat processing techniques.
  • Knowledge of food processing, storage, and receiving standards.
  • Proficiency in pastry, bread baking, and chocolate making techniques (for Pastry Kitchen).
  • Ability to work with various ingredients and set priorities.
  • Ability to work under stress, remain calm, and solve problems.
  • Ability to work in moist, hot, and loud environments.
  • Good leadership and training skills.
  • Knowledge of HACCP standards.
  • Experience in similar roles within international chain hotels is preferred.
  • Good command of English, both verbal and written, is preferred.
