CHEF DE PARTIE - VIKING OCEAN CRUISE
Job Responsibilities
- Control and maintain a main Galley section and its entire food production; follow set recipes & dish guidelines; assist with cleaning during food preparation periods, if additional cleaning is required.
- Bring forward any suggestions and ideas for improvement to the Galley Team as a whole, including identifying training needs and operational issues.
- Prepare daily electronic food requisitions by checking merchandise in Galley stores.
- Review recipes daily and maintain recipe folders of the assigned section, ensuring they are kept in excellent condition.
- Prepare food samples as deemed necessary by the Executive Chef, ensuring quality and presentation during food preparation and service hours.
- Maintain and control the Service Line during meals, ensuring food quality in line with Viking STAR Service Standards.
- Check daily deliveries from the Storeroom for accuracy and report discrepancies.
- Practice economical work methods to minimize wastage.
- Ensure food preparations and storage comply with health policies and company regulations, maintaining clean work habits.
- Understand HR policies, working hours, crew contracts, and work schedules to maintain accurate paperwork.
- Lead and support a multicultural team, ensuring satisfaction, productivity, and retention; conduct daily team meetings for updates and feedback.
- Inspect mise-en-place readiness 15 minutes prior to service.
- Assign responsibilities and train personnel under your supervision.
- Uphold grooming standards per Viking’s Image and Uniform Standards.
- Secure company property, especially during rough weather, to prevent loss or damage.
- Be knowledgeable about itinerary ports, shore excursions, and shipboard activities.
- Contribute to culinary KPI goals and participate in safety and security training and exercises.
- Handle last-minute requests due to functions or itinerary changes as directed by supervisors.
Job Requirements
- Minimum 3+ years experience as a CDP or similar in a 5-star hospitality or restaurant environment; advanced culinary skills required.
- Fluent in English with excellent communication skills for interpreting menus and recipes.
- Physically fit, healthy, with no medical issues, drug addiction, or alcoholism.
- No visible tattoos.
