What will I be doing?

As the Chef de Partie, you will be responsible for performing the following tasks to the highest standards:

  • Responsible for restaurant food production, including breakfast, room order, dinner, and staff meal.
  • Prepare menus as required in a timely manner and strictly in accordance with the recipe, standards, and the standard of plating.
  • Maintain compliance with FSAA requirements in all aspects of hotel operations.
  • Operate all equipment, appliances, and machines properly.
  • Assist the Chef in training staff, working on SOP improvement, and continuous improvement in all areas.
  • Participate in kitchen meetings to improve operations and maintain communication.
  • Perform takeout work or work outside the kitchen when required.
  • Inform staff about occupancy rates, forecast plans, and revenue.
  • Respond to guest requests satisfactorily.
  • Engage in active learning and implement changes as needed.
  • Accept constructive criticism openly.
  • Follow new menu changes and working methods for new menus, specials, and promotions.
  • Work with the Chef on food ordering and maximize food use to reduce waste.
  • Check equipment regularly and report issues.
  • Ensure recipes and costs are updated.
  • Monitor food quality and quantity for cost efficiency.
  • Attend management and departmental meetings.
  • Check food quality and make adjustments as needed.
  • Collaborate with the Chef on menu selection to satisfy guests.
  • Handle electrical equipment safely.
  • Promote team working methods to meet standards and objectives.
  • Ensure staff are aware of safety and emergency procedures.
  • Perform other duties as assigned.
What are we looking for?

A Hilton Chef de Partie should:

  • Have a high school diploma or equivalent, preferably from a culinary school.
  • Have 1-3 years of kitchen management experience in a 4- or 5-star hotel or high-level restaurant, plus 3 years as a Kitchen Chef.
  • Be creative, research-oriented, and effective in execution.
  • Have extensive knowledge of kitchen equipment and staff training capabilities.
  • Possess basic computer skills.
  • Know food safety systems.
  • Be able to prioritize and complete tasks on time.
  • Work well under pressure, stay calm, and solve problems.
  • Work independently and as part of a team.
