Accor is seeking a talented and passionate Specialty Chef - South Indian to join our culinary team in Chennai, India. You will lead kitchen operations, mentor your team, and maintain the highest standards of food quality and safety while celebrating the rich culinary heritage of South India.

Responsibilities include preparing authentic South Indian dishes, developing regional menus, managing inventory and costs, and training staff to ensure exceptional dining experiences for guests at our hotel.

Qualifications

  • Minimum 5 years of professional cooking experience, with at least 3 years specializing in South Indian culinary traditions.
  • Strong knowledge of food safety, hygiene, and sanitation best practices.
  • Excellent leadership and team management skills with experience mentoring kitchen staff.
  • Ability to work in fast-paced environments while maintaining composure and organizational skills.

Responsibilities

  • Prepare and cook authentic South Indian dishes using traditional and contemporary cooking techniques
  • Develop and customize menus that showcase regional specialties while accommodating seasonal ingredients and organizational objectives
  • Oversee kitchen operations, ensuring compliance with food safety regulations, hygiene standards, and sanitation protocols
  • Manage food inventory, control costs, and optimize ingredient sourcing from local and regional suppliers
  • Train, mentor, and supervise kitchen staff to maintain consistent quality and operational efficiency
  • Maintain precise plating standards and presentation techniques to ensure every dish meets organizational quality benchmarks
  • Collaborate with front-of-house staff to understand customer preferences and gather feedback for continuous improvement
  • Monitor and evaluate food preparation processes, making adjustments to enhance flavor profiles and nutritional value
  • Maintain detailed records of recipes, cooking procedures, and food safety documentation
