Qualifications

• 7–9 years of core R&D experience in savory seasonings, snack powders, or instant noodle tastemakers.
• Experience in formulation, scale-up from lab to factory production.
• Strong understanding of spice chemistry and flavour matching.
• Regulatory knowledge and documentation (FSSAI) required.

Responsibilities

• Lead formulation & NPD for snack seasonings and tastemakers.
• Scale bench-top trials to commercial plant production.
• Oversee sensory evaluations and shelf-life studies.
• Ensure BOM, specs, and data sheets meet regulatory standards.

Job description

We are seeking an experienced R&D Manager to lead new product development (NPD) for snack seasonings and noodle tastemakers at our corporate office at Dahisar, Mumbai. You will drive flavour innovation from concept to commercialisation, matching market trends and optimising costs.

Role & responsibilities

• Formulation & NPD: Develop, match, and optimise high-quality seasoning blends, dry rubs, and tastemakers for snacks and instant noodles.
• Lab to Plant Scale-up: Lead bench top trials and seamlessly transition formulations from the corporate test kitchen to commercial factory production.
• Sensory & Shelf Life: Conduct rigorous sensory evaluations and shelf-life stability studies for all new formulations.
• Regulatory & Documentation: Ensure compliance with FSSAI standards; maintain accurate Bills of Materials (BOM), specs, and technical data sheets.
• Vendor & Cross-Functional Collaboration: Partner with Procurement to source raw materials/oleoresins and collaborate with Sales/Marketing to deliver on client briefs.

Preferred candidate profile

• Education: B.Tech / M.Sc. / M.Tech in Food Technology or Food Science.
• Experience: 7 to 9 years of core R&D experience specifically in savory seasonings, snack powders, or instant noodle tastemakers.
• Technical Skills: Deep understanding of spice chemistry, flavour matching, taste enhancers, and industrial food processing.
• Soft Skills: Strong project management, team handling, and cross-functional communication.
