• Manage labor costs by evaluating labor needs against projected sales during the shift.
• Review monthly budget and P&L.
• Builds sales by promoting customer satisfaction.
• Monitors costs by supervising crew prep, production and procedures.
• Tracks waste levels and ensures proper shift procedures.
• Communicates issues in sales and profit to GM/DM.
• Assist GM/DM in executing the restaurant sales and profits plan.
• Monitor food costs to prevent waste and theft.
• Train and develop crew to improve performance.
