In response to business growth they're creating this junior sous chef position as additional support to the head chef and senior sous chef. They are taking a pragmatic approach to this appointment and are giving serious consideration to chefs whose most senior role in the kitchen to date has been at chef de partie level, with a preference for chefs with a strong pedigree in hotel kitchens, ideally kitchens with a similar mix of business to theirs.
