The Role

We are seeking a passionate and talented Banqueting Sous Chef to join our dynamic kitchen team. Reporting to the Head Chef, you will play a key role in delivering high-quality, innovative dishes for large-scale events, ensuring every guest enjoys a memorable dining experience. This is an exciting opportunity for a creative and driven individual to shine in a prestigious venue.

Key Responsibilities:
  • Assist the Head Chef in planning, preparing, and executing high-quality menus for banquets, weddings, and events (up to 300 guests).

  • Supervise and motivate the banqueting kitchen team, ensuring consistent standards and efficient service.

  • Ensure all dishes meet the highest standards of presentation, taste, and quality.

  • Manage food preparation, stock control, and wastage to maintain profitability.

  • Maintain strict adherence to health, safety, and hygiene regulations (HACCP).

  • Collaborate with the events team to tailor menus to client specifications.

  • Contribute creative ideas for seasonal and bespoke menu development.

  • Assist in training and mentoring junior chefs to foster a positive kitchen culture.

Requirements:
  • Proven experience as a Sous Chef or Senior Chef de Partie in a high-volume banqueting or fine-dining environment.

  • Strong knowledge of Irish and international cuisine, with a focus on seasonal, locally sourced ingredients.

  • Exceptional organizational and leadership skills, with the ability to perform under pressure.

  • A relevant culinary qualification or equivalent professional experience.

  • In-depth understanding of food safety and kitchen hygiene standards.
