Job description

Duties and Responsibilities

As Sous Chef, I will support the Executive Chef and assume responsibility for the efficient operation in the following areas:

• Continually focus on the rejuvenation of the culinary experience.
• Assess Menus and Wine Lists regularly to remain relevant and align with Eat With Six Senses practices.
• Establish purchasing practices that meet the requirements of the Six Senses nutrition and sustainability platforms.
• Instill a cost-focused philosophy through training and education.
• Operate the department in compliance with all legal, statutory, and financial requirements, including documentation, reporting systems, contractual obligations, security and safety protocols, communication standards, product and service standards, host management practices, and budget controls to ensure successful hotel operations.
• Strictly adhere to LQA standards and guest comments.

Qualifications

To execute the role of Sous Chef - Banquet, I should have the following qualifications, skills, and experience in a similar role within luxury hotels, demonstrating proven results:

• High school diploma or equivalent, with at least 5 years of kitchen experience in a full-service outlet or similar setting. A hospitality diploma/degree from a recognized institution is preferred.
• Experience in banquet operations.
• Knowledge of broiler equipment, meat and fish cookery, proficient knife skills, and understanding of farm-to-table concepts.
• Alcohol awareness certification and/or food service permit or valid health/food handler card as required by local or state regulations.
