Kempinski Hotels is seeking a skilled Japanese Restaurant Kitchen Lead in Bali to manage a satellite kitchen section and ensure dishes meet menu standards. You will oversee daily operation, maintain HACCP hygiene, and support the Head Chef in achieving excellent food quality and presentation.

The role requires 3–5 years in Japanese cuisine in hotel or fine dining, strong knife skills, and a collaborative mindset to train staff and control costs while upholding Kempinski standards.

• Ability to supervise kitchen operations and ensure consistent quality and presentation.

• Organize and set up the assigned satellite kitchen section for speed and productivity.

• Ensure kitchen equipment is properly maintained with minimal breakage.
• Adhere to fire, hygiene and safety policies of the company.
• Coordinate with related outlets to ensure high-quality production according to business trends.
• Support in maintaining operation standards and food preservation with tangible effects.
• Maintain consistency in a wide range of dishes and decorations.
• Follow standards for product quality, preparation technology, and inventory control.
• Daily checks on food spoilage and wastage; alert Head Chef to control purchases.
