R&D Manager – Fried Chicken Restaurant Chain

The R&D Manager leads the innovation, development, and improvement of the restaurant chain’s menu, recipes, and product offerings. This role ensures that all new products align with brand identity, customer preferences, operational feasibility, and cost targets. The R&D Manager collaborates with operations, procurement, and marketing to drive product launches and maintain the brand’s competitive edge in the market.

Job Responsibilities

  • Research and develop new fried chicken recipes, menu items, sauces, sides, and beverages aligned with brand standards.
  • Innovate seasonal or promotional menu concepts to drive sales and customer interest.
  • Adapt international food trends to suit local tastes and preferences.
  • Develop and maintain detailed recipe documentation, including portion sizes, cooking methods, and presentation.
  • Work with the procurement team to ensure ingredient availability and cost efficiency.
  • Conduct product costing to achieve target food cost percentages without compromising quality.

Product Testing & Quality Assurance

  • Conduct kitchen trials and sensory evaluations to ensure product quality, consistency, and taste.
  • Collaborate with operations to test products in pilot outlets before chain-wide rollout.
  • Implement quality benchmarks for ingredients and final products.
  • Work closely with procurement to source innovative ingredients and packaging.
  • Coordinate with operations to ensure menu items can be produced consistently in all outlets.
  • Collaborate with marketing to develop product launch plans, POS materials, and promotional content.

Training & Rollout Support

  • Conduct training sessions for outlet managers and kitchen staff on new recipes and preparation methods.
  • Develop training manuals, videos, and visual aids for product implementation.
  • Provide on-site support during the initial launch period.

Compliance & Standards

  • Ensure all menu items comply with Halal certification and local food safety regulations.
  • Regularly review recipes to ensure adherence to brand specifications and regulatory standards.
  • Monitor market trends, customer feedback, and competitor offerings for innovation opportunities.
  • Improve existing menu items based on operational feedback and customer demand.

Job Requirements

  • Education & Experience: Bachelor’s degree in Culinary Arts, Food Technology, or related field. Minimum 5 years’ experience in product development or culinary R&D, preferably in QSR or fried chicken concepts.
  • Industry Knowledge: Deep understanding of fried chicken preparation methods, flavor profiles, and quick-service kitchen workflows. Familiarity with food science, sensory evaluation, and ingredient sourcing. Experience working with Halal-certified products and processes.
  • Technical Skills: Proficient in recipe documentation, costing software, and MS Office Suite. Skilled in kitchen trial management and product testing. Strong knowledge of food safety standards and HACCP principles.
  • Creativity & Innovation: Ability to create unique, marketable menu items that balance creativity, taste, and operational practicality. Keen awareness of current food trends and the ability to adapt them to brand identity.
  • Soft Skills & Attributes: Strong leadership, presentation, and communication skills. High attention to detail and commitment to quality. Problem-solving mindset with the ability to work under pressure and meet deadlines.
  • Other Requirements: Willing to travel for product testing, supplier visits, and outlet training. Flexible to work extended hours during product launches or testing phases.
