Overview

We are seeking a highly motivated and results-oriented Research & Development Manager with significant experience in both general bakery product development and the specialized area of bread crumbs.

The ideal candidate will be responsible for conceiving, developing, and implementing new and improved bakery products, breadcrumb varieties, processes, and technologies.

This role requires a strong understanding of bakery ingredients, formulations, production methods, and market trends, as well as in-depth expertise in breadcrumb manufacturing, functionality, and applications.

Key Responsibilities
  • Lead and manage all aspects of the bakery and bread crumb R&D process, from ideation to commercialization.
  • Develop innovative and commercially viable bakery and bread crumb formulations and recipes.
  • Oversee pilot trials and scale-up of new products.
  • Optimize existing formulations and processes for quality, cost-effectiveness, and operational efficiency.
  • Collaborate closely with cross-functional teams, including Marketing, Production, and Quality Assurance.
  • Stay up-to-date with the latest advancements in bakery ingredients, technologies, regulations, and breadcrumb techniques.
  • Manage and mentor members of the R&D team.
  • Ensure compliance with food safety and quality standards for both bakery and bread crumb production.
Qualifications
  • Bachelor’s degree in Food Science, Food Technology, Bakery Science, or a related field.
  • Proven track record of at least 5 years of experience in Research & Development, with a significant portion specifically focused on both general bakery and bread crumb development.
  • Minimum 5 years in a managerial R&D position, preferably in the food or bakery manufacturing sector.
  • In-depth knowledge of bakery ingredients, formulations, and processing techniques.
  • Strong understanding of food science principles, sensory evaluation, and shelf-life testing.
  • Specific knowledge and experience in breadcrumb manufacturing processes, raw materials, functionality across various food applications, and quality parameters.
  • Preferably domiciled in Bogor or surrounding areas.
